Perfect Crispy Potatoes

These crispy potatoes are a simple, yet delicious, addition to almost any meal.   They can be made with as much, or as little, seasoning as desired.  We like our’s with a lot of garlic, kosher salt, pepper, and rosemary, but made plain with kosher salt and pepper is good, too.  Plan ahead when making these potatoes, though, because it takes a good hour for prepping and cooking.  But they are so worth it.

  • 1/4 cup olive oil
  • 3 russet potatoes, cut into 1/2 inch cubes {we like the skin on but you can peel them, if desired}
  • 3 tablespoons water
  • 1 tablespoon butter
  • 1-3 teaspoons of each seasoning, depending on your taste: kosher salt, coarse ground pepper, minced garlic, rosemary {we use 1-2 teaspoons of each of them}


  1. Preheat oven to 375 degrees.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the potato cubes and the seasonings you are going to use.
  4. Saute for 5 minutes, stirring frequently.
  5. Add the water and stir to mix well. Then cover with the lid and steam the potatoes until the water evaporates ~ about 4 minutes, stirring every 2 minutes or so.
  6. Lower the heat to medium and saute for 2 minutes or until all traces of the water are gone.
  7. Add the butter and stir to coat the potatoes.
  8. Spray a baking sheet with cooking spray and spread the potatoes out on the baking sheet.
  9. Bake until the potatoes are crisp and browned, about 25-35 minutes.

    Yum! This potatoes look delicious. One of my favorites is crispy potatoes. I have tried baking in the oven instead of frying but they don’t come out as crisp as I would like. I will have to try this recipe. Thank you for sharing.
