Oatmeal Cookies {Fully Loaded}Well, what can I say about these fully loaded oatmeal cookies except they are perfect.  Oh, and they’ve been our signature cookie for the last year thanks to my mom reintroducing me to them.  She has made this particular recipe for too many years to count and it is super delicious just the way it is.  Soft, chewy, and loaded with oatmeal.  I took her recipe and added to it.  Think of an oatmeal cookie with chocolate chips and white chocolate chips. Yum.  Then add splashes of more oatmeal and coconut and toffee bits.  Yum, again.  Like I said, this is a perfect cookie.

Makes about 7 dozen cookies

Oatmeal Cookies {Fully Loaded}

Ingredients

  • 2 cups shortening (or butter at room temperature)
  • 2 cups brown sugar
  • 2 cups white sugar
  • 4 eggs
  • 1/2 teaspoon vanilla
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 4 cups all-purpose flour
  • 3-1/2 cups oats (regular rolled)
  • 1/3 cup each of: chocolate chips, white chocolate chips, toffee bits, coconut, and more oats

Directions

  1. Cream together the shortening (or butter), brown sugar, and white sugar until well creamed.
  2. Add eggs and vanilla and mix well.
  3. Add the baking powder, baking soda, and flour and mix well.
  4. Add in the chocolate chips and white chocolate chips, toffee bits, coconut, and more oats and mix until well blended.
  5. Make walnut sized balls and place on a cookie sheet.
  6. Bake at 350 degrees for 11-12 minutes.

      Well hello, Leilani. Let me know how it is with dried cranberries. I wouldn’t like it that way cuz I don’t like them but that’s what’s great about
      recipes like this one, you can add in what you personally like. 🙂

      I know what you mean. It somehow makes them seem more nutritious, therefore we can eat more. Right?
