Cream of Crab Soup

Cream of Crab SoupAfter tasting some delicious Cream of Crab Soup in Baltimore a couple of years ago I set out on a quest to either find a recipe that was similar or recreate it myself.  After trying a few different recipes I found this particular one at that I adapted just a bit to suit our taste.  It’s rich, creamy, and a bit spicy with the Old Bay Seasoning and the crabmeat finishes it off perfectly.  It’s one of the most delicious soups I’ve ever made.  Served up with salad and crusty bread, this meal is pure restaurant quality.

Cream of Crab Soup

Cream of Crab Soup


  • 3 tablespoons all-purpose flour
  • 1 (1.25 ounce) envelope hollandaise sauce mix
  • 4 cups half and half, divided
  • 1/4 cup butter
  • 1-3 tablespoons Old Bay Seasoning {I use 1 and it's just right for us}
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon celery seed
  • 1 cup heavy whipping cream
  • 1 pound crabmeat {In a pinch I have used canned but fresh is much better}


  1. In a medium bowl, blend the flour and hollandaise sauce mix with 2 cups half and half.
  2. Melt butter in a medium, heavy saucepan over medium-low heat. Slowly add the hollandaise mixture, stirring constantly until thickened.
  3. Add the remaining half and half, Old Bay Seasoning, dry mustard, celery seed, and whipping cream.
  4. Bring to a simmer and then reduce the heat to low.
  5. Add the crabmeat, stirring gently until warmed through.
  6. Serve when hot.

    Will have to share this with my sister and BIL. With cottages in both Prince Edward Island and the Atlantic coast of Florida my BIL loves his seafood! Since I always buy him some Old Bay Seasoning at Christmas, I think I will put all the spices it calls for in a nice enameled pot since I have his name this year!!

    Your cream of crab and my lobster bisque stories are similar. We reminisced of our New England soup affairs and had to recreate them. Looks delicious. 🙂
