Easy Creamy Hummus

Hello friends.  With all the busyness of summer I’ve been absent from this blog for a little over a month, but I’ve really missed it.  I hope you’re having a great summer.

Today I have a simple, delicious recipe to share with you.

I love the creamy hummus that Mediterranean restaurants serve.  I’ve been making this hummus recipe fairly often over the last 12 months or so and I think it rivals good restaurant hummus – and it’s so much better than store-bought.  It’s super smooth and flavorful and makes a great snack or lunch – we like to dip tortilla or pita chips, pita bread, and sometimes sliced up veggies.  I love how easy this is to make – just throw everything in a food processor and process to your desired creaminess.

Easy Creamy Hummus

Ingredients

  • One 15-ounce can garbanzo beans, drained and rinsed
  • 1/4 cup fresh lemon juice (you can also use bottled, but fresh tastes better)
  • 1/4 cup tahini
  • 1 teaspoon minced garlic
  • 2 tablespoons olive oil, plus more for serving
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cumin
  • 2 tablespoons water
  • Paprika, sprinkled over the top for serving

Directions

  1. Place all of the ingredients in the bowl of a food processor.
  2. Process to your desired creaminess.
  3. Spoon the hummus onto a plate or into a bowl for serving.
  4. Drizzle with olive oil (about 1 tablespoon) and sprinkle with paprika. (As you can tell from the above picture, we like a lot of paprika.)

Peanut Butter and Honey Popcorn

This peanut butter and honey popcorn is one of our very favorite snacks to eat while watching a movie.  It only takes about five minutes to throw this tasty snack together!   We also like to think it’s fairly nutritious because we use natural unsweetened peanut butter and raw honey.  But then we use microwave popcorn and the oils are not at all good for us.  Aagh.

While I’m writing this up I’m convincing myself that I need to either pull out our air popper and use it or start popping plain corn in the microwave without using oil.  {Here’s a link with instructions for making homemade microwave popcorn.}

Peanut Butter~Honey Popcorn

Ingredients

  • 1 package of microwavable popcorn
  • {or pop your own using your preferred method ~ about 9 or 10 cups popped}
  • 1/3 cup natural peanut butter
  • 1/3 cup raw honey
  • 1 teaspoon vanilla

Directions

  1. Prepare the popcorn and remove unpopped kernels.
  2. Combine the peanut butter and honey in a small bowl, mix to combine, and warm up in in a pan or the microwave until melted. Stir to mix well.
  3. Add the vanilla and mix well.
  4. Pour over the popcorn and stir to coat the popcorn.

Ingredients

  • 1-1/2 - 2 gallons popped popcorn {I usually use microwave popcorn ~ 2-3 bags.}
  • 1 cup butter
  • 3 cups brown sugar
  • 1 cup Karo syrup
  • 1 can sweetened condensed milk

Directions

  1. Put popped popcorn in a very large bowl, remove hulls, and set aside.
  2. Combine butter, brown sugar, Karo syrup, and sweetened condensed milk in a medium sauce pan.
  3. Cook to soft-ball stage over medium-high heat, stirring constantly.
  4. Pour hot, cooked mixture over popcorn and mix until the popcorn is completely covered.
